Here is the recipe I created (with a little input from my mother~):

 Rosemary Sage Sausage Recipe
(gluten-free, egg-free, dairy-free and soy-free)


3 cups (1/2 of 12 oz bag) of Rudi’s GF Stuffing
½ C of Dairy-Free, Soy-Free margarine (Earth Balance)
½ large onion, chopped
2 celery sticks, chopped
½ tsp black pepper
½ tsp rosemary
½ tsp garlic salt
¼ tsp sage
8 oz. sausage
1 C + 1/8 C of chicken broth
Preparation:
1.       Brown sausage over medium heat and finely separate into small pieces, Bolognese         style.  When finished, drain and set aside.
2.       In a separate pan, melt ¼ C dairy-free, soy-free margarine over medium heat.


3.       Add chopped celery and onions and let cook until tender.
4.       Combined prepared sausage, pepper, rosemary, garlic salt and sage.  Let simmer            for 5 minutes. 


5.       Add another ¼ C of dairy-free, soy-free margarine, 1 C of chicken broth and bring to       a boil.
6.       Add ½ package of Rudi’s Savory Herb Gluten-Free Stuffing mix and let sit for 5           minutes.
7.       Makes 3 cups of stuffing.  Fabulous as a side dish with Rosemary Garlic chicken! 

EASILY feeds a family of 4.

    I would make my stuffing with onions, celery & olives. I would use frontier's vegetable broth (it has good veggies & kelp in it!). I would also use some of this Celtic sea salt spice blend that has kombu flakes in it. So sea veggies would be the 'secret ingredients' to add more nutrients to it! I might even sauté the veggies with a little homemade ghee!

  2. I liked your page and thank you so much for the fabulous recipe and giveaway!
    I would add a Thanksgiving Texture Theme by adding in some cranberries for sweetness and fruit; add toasted thin almond slices for crunch and protein and cook it all up in chicken broth for flavor too!

    1. Renata... I love cranberries! Almonds is no-no here except for me, but I, personally, would love to try it! What a great combo!

  3. Rudis stuffing sounds tasty and thanks for sharing - I would add some festive colors for the holidays by including some spinach and diced tomatoes for a red and green hue. Also a fan. Thanks!

  5. Hi Daniella,

    I love this recipe! Last year I made GF stuffing with dried figs and apricots and think I will adapt this recipe with those ingredients...also have added apples/raisins in the past...mmm :)

  6. Hi! Thank you so much for offering this! I would make GF stuffing with cranberries, candy onions, homemade broth, sea salt, garlic and possibly some chorizo to kick it up a notch.

  8. i became a fan on facebook. My name is Jenn your recipe looks amazing. i would add pumpkin sprouts to the top for nice blend of fall flavors. i would also grate dried cranberries into the stuffing for a hint of flavor.

    1. Pumpkin sprouts? Sounds delightful! Where do I find them? and grated dried cranberries.. my kids must might eat them that way:-)

    2. pumpkin sprouts you need to soak pumpkin seeds in water then add to a sprouter. sproutpeople.org discuss the best way to create pumpkin sprouts as they aren't typically sold in stores or are very expensive at your local specialty shops. you could easily replace the pumpkin sprouts with toasted alfalfa sprouts that you coat is cinnamon and brown sugar to gain some of that fall flavor. (i love all sprouts i think they add unique taste and texture).
