Easter Fun with Food Allergies and Food in the Classroom

Easter parties... food in the classroom.. and food allergies.  A stressful combination for many. Having food allergies stinks.  Often one is ostracized and left out.  Made to feel as though there's something wrong with them because they can't eat what everyone else does.  But it doesn't have to be that way.



S.A.F.E. Easter Treats

Food is still allowed in our classrooms, creating an educational opportunity for my kids because they can share their favorite treats - made from scratch and NOT some pre-packaged, preservative laden mix.  I love hearing the joy in their voices as they tell me how much their friends enjoyed their egg-free, dairy-free, totally peanut/nut-free treats.


Easter Jellybean Cupcakes and Apples

I can't thank my mom enough for sharing her 'wacky cake' recipe with me years ago, otherwise known as my Zebra Cupcakes.  This egg-free, dairy-free, peanut-free, tree nut-free recipe is an easy to make, tasty recipe which I whipped up twice this week.  I omitted the cocoa, added some extra flour and used lemon instead of vanilla! Delish!  Of course, I topped with my new favorite Lemon-Lime Icing



Next time I'll use one of my favorite gluten-free mixes so the newly diagnosed gluten-free cutie pie in the class can join in too!  Fortunately, I always bring fruit for those who don't like sweets... yes, there are a few of them out there!
