S.A.F.E. Easter Treats |
Food is still allowed in our classrooms, creating an educational opportunity for my kids because they can share their favorite treats - made from scratch and NOT some pre-packaged, preservative laden mix. I love hearing the joy in their voices as they tell me how much their friends enjoyed their egg-free, dairy-free, totally peanut/nut-free treats.

I can't thank my mom enough for sharing her 'wacky cake' recipe with me years ago, otherwise known as my Zebra Cupcakes. This egg-free, dairy-free, peanut-free, tree nut-free recipe is an easy to make, tasty recipe which I whipped up twice this week. I omitted the cocoa, added some extra flour and used lemon instead of vanilla! Delish! Of course, I topped with my new favorite Lemon-Lime Icing.
Next time I'll use one of my favorite gluten-free mixes so the newly diagnosed gluten-free cutie pie in the class can join in too! Fortunately, I always bring fruit for those who don't like sweets... yes, there are a few of them out there!
