Lemon-Lime Icing
**dairy-free, egg-free, peanut-free, tree-nut free
1 lb box of Pure Cane Powdered Sugar
1/4 C of lemon
1 tsp of vanilla extract
1/2 C of dairy-free margarine (Earth Balance, Nucoa)
1 lime rind
Beat with your electric mixer for 2 minutes. Scrape the bowl to ensure all being well mixed. Add a tsp of extra water at a time, to adjust to your preferred consistency. Add in a tsp of finely grated lime rind.
Top off your cinnamon rolls, cupcakes or cake with this tasty icing!
