1-2-3 Gluten Free.. AND FREE of Many OTHER Allergens!

The last few weeks I've had the opportunity to try some mixes from a company which is certified gluten-free, wheat-free, dairy-free, casein-free, peanut-free, tree nut-free, corn-free, egg-free, soy-free, GMO-free AND pareve.  I wondered whether their tag line 'Easy to Make, Can't Beat the Taste!' would hold true.

Of course, I was pleasantly pleased with the outcome.

Micah's Mouthwatering Corn Bread Mix, manufactured by 1-2-3 Gluten Free, Inc., Orange, OH  44022.

Ingredients include:  STONE-GROUND YELLOW CORNMEAL, CORNSTARCH, CORN FLOUR, ALUMINUM-FREE BAKING POWDER (SODIUM ACID PYROPHOSPHATE, BAKING SODA, CORNSTARCH, MONOCALCIUM PHOSPHATE), SALT, BAKING SODA, XANTHAN GUM, NIACIN (VITAMIN B3), REDUCED IRON, CALCIUM CARBONATE, THIAMIN MONONITRATE (VITAMIN B1), RIBOFLAVIN (VITAMIN B2), FOLIC ACID (VITAMIN B9).

I followed the instructions on how to make them eggfree and dairyfree.  I used flax milk which didn't thicken as much as I would have liked with the cider vinegar.  I think I will try coconut milk the next time and see how that works.  

As I experiment with more multiple allergen-free mixes, especially gluten-free ones, I realize they tend to be a bit denser and more crumbly than what I am used to.  Beyond that, my family enjoyed every bite of them, especially with a smear of dairy-free, honey butter!
