Dairy-Free Lasagna - Another First for Our Home

Would you believe that I had, for the very first time in 10 years, LASAGNA, for dinner tonight at my dinner table?!  A staple in my home growing up.. NOT so easy to pull off when your meals need to be dairy-free.  I bake a lot from scratch, but haven't pulled off making this meal for my egg-free, nut-free, and peanut-free home.

It is a simple durum semolina pasta layered with a tasty red sauce and primacotta soy ricotta.  My kids LOVED it.  The excitement in my son's voice when he heard we were going to have lasagna for the first-time was bittersweet... heartwarming, yet a bit sad because I've never taken the time to figure it out.

This product will definitely be a keeper in our home.  Even better is that I am NOT so afraid to try it on my own now.  Add some burger, a little Tofuttis soy ricotta cheese, and I think I can actually pull off a homemade lasagna once again~ dairy-free to boot!
