Dairy-free, Gluten-free, Totally Nut-Free Blueberry Banana Muffins

NOT being a gluten-free Mama with many gluten-free friends, I am always looking for quality mixes to ease my gluten-free baking challenges.  These mixes are ALSO free of top 8 allergens.


S.A.F.E. Blueberry Banana Muffin Recipe
Blueberry Banana Muffins
gluten-free, dairy-free, peanut-free and tree nut-free

1/4 C oatmeal
1 tsp baking soda
1/2 tsp salt
1/2 C coconut oil
1/3 C sugar
1/3 C brown sugar
2 eggs*
2-3 ripe bananas
1/3 C milk of choice (I used almond milk)
1 tsp vanilla
1 C blueberries


Spray a muffin pan.  Whisk together flour, oats, baking soda and salt. In a separate bowl, mix coconut oil and sugars until light and fluffy. Add one egg at a time. Mash bananas with vanilla and milk. Combine with coconut oil mixture. Slowly mix in flour mixture. Fold in blueberries. Bake 20-25 minutes at 350 degrees.

 * Egg replacer of choice 

Personally, I don't think you can go wrong with any of the products from Allergic Solution.  This All-Purpose mix is a great option for those wanting to surprise their gluten-free friends with tasty cupcakes, muffins and cookies.  You can also find more information and help on their on-line Allergic Solution Recipes and Tips link.

My baking buddy, Clover Smith, came up with this recipe and it's delicious.  None of us are gluten-free and we were pleased at how great these tasted, especially her picky 11 year old taste tester.
