Azumaya Tofu - An easy Gluten-Free, Dairy-Free, Vegan Cooking Option

For those who can't use eggs or milk in their baking, finding a good binding alternative can be challenging.  My egg substitute has generally been:  gelatin and water; a mixture of flax and water; or water/oil and baking powder.  I have shied away from using tofu just because I didn't know how to adapt it to recipes I was using.  After this weekend, I have decided I definitely need to expand my cooking repetoire.
